Caramel Macchiato



Good morning!! Hope your day is off to a fabulous start. Let me start by telling you, I LOVE my morning coffee!! Like REALLY love my morning coffee. I love the crisp taste of java, the stronger the better for this gal. Now, here's the deal. I stopped drinking coffee a couples months ago due to some serious stomach issues. I ended up in the hospital one night with some major tummy pain., and was diagnosed with a peptic ulcer. Doctor say what? I couldn't have an ulcer! I have no risk factors in my life...I don't smoke, drink or use drugs(LOL.had to throw that one in). I'm not over weight... by much. I don't have big stresses in my life, besides the normal. So what was giving me all that grief. I cut coffee and started Whole30 not long after. If you don't know about Whole30, I'll do a totally separate post on that another day. Now when Cafe Latte became available in Canada, I was all over that! Super shake that tastes like coffee??! Ummm. YESSS! 

Since Starbucks is my fav crack coffee, and I love a good challenge. I've decided to recreate their signature drinks with my Shakeology. How cluckin awesome is that? First one and one of my fav drinks is the Caramel Macchiato. Yum yum

You Are Your Only Limit

I'm going to let you in on a little secret. 

I have rotational scoliosis. 

I developed it in my teen years, but wasn't officially diagnosed until I was almost 30. A friend noticed my collar bones were uneven, like an inch off. Me thinking maybe my back was out, went to visit a chiropractor. Really?!?! Who's collar bones can be that out of line? After my first visit with the chiro he said I was definitely out of alignment and suggested we do an X-ray. Sure enough, there it was!! 27 years I went thinking my rib hump was some ribs out of place. So, another tidbit, most peeps with rotational scoliosis have a rib hump. Because my torso is twisted, one side of my rib cage jots out. Kinda funny looking when I'm at a healthy weight. Ok, now to the point of my story... Today I was doing diagonal push-ups and it was the first time I noticed my range of motion and strength was a bit one sided. No big deal! Push through, get stronger! I also noticed when I stretched my shoulder out, one side of my upper body has 25% more flexibility?!? Yup, I'm totally crooked! But you know what?? I will keep pushing and get stronger. When you have tough days, you are your only limit.

Spinach Frittata


I just want to start off with, if you haven't heard of Whole30, you need to grab the book. This has changed my life forever. I no longer crave sugar and carbs. My mouth doesn't water when someone makes toast in my house. LOL. You know what I mean. I feel great. I no longer have afternoon energy crashes. I feel and think clearly. Not to mention all the awesome physical changes like a fantastic skin, trimmed down waist line and no more bloating. Ok, so this has got to be the cake winner for me. You know how you look great in the morning, flat tummy and no bloat. Then by evening, you have this tire around your waist and your rings fit tight? Well I look and feel like the morning girl 24 hours a day. No more puffy skin, water retention or gut bloat. If I did Whole30 for one reason, that would be it! 

Alright, if that hasn't convinced you to try making the dive in, this recipe will surely convince you!


Spinach Frittata

6 large eggs
1/4 tsp salt
1/4 tsp pepper
2 tbsp cooking fat (I used avocado oil)
1/2 diced onion
1 cup diced tomato
3 cups spinach
lemon juice

1. Heat oven to broil.

2. In large bowl whisk eggs, salt and pepper.

3. In large oven-safe skillet, warm cooking fat and add onion and tomato. Cook and stir for 2-3 minutes. Then add spinach and let wilt.

4. Add eggs and fold into veggies. Continue to cook without stirring eggs for 3-4 minutes. Eggs may look wet on top, that's ok.

5. Lay a few slices of tomato on top and drizzle with lemon juice, then slide into oven and broil until top is golden brown. This may take 3-5 minutes, depending on stove. 

6. Once done remove and cut into pieces.


This recipe made 4 servings for me, and was great served with fruit or sweet potato hash!

Turkey Meatloaf Muffins


Ok, who doesn't love meatloaf in fall? Meatloaf is my easy go to in the cooler months, when I don't bbq as much. That and I went to Costco and bought the ground turkey 3 pack, and put them in the freezer. Then went back 2 weeks later and bought them again. Yup, sure did. And to make it even better, I only have the freezer that's in my fridge. So you can imagine the falling packs of meat every time anyone opens the freezer door. It's time to make something out of them.

I wanted to make ground turkey meatloaf and saw an idea to put cheese in the middle and make them in muffin tins. Easy peasy! So today when I was out, I grabbed some Jalapeno Gouda, from our Bulk Cheese Warehouse. If you're ever in Saskatoon, you have to check out this place. It is amazeballs, and has every kind of cheese you can imagine!! Love it!! 

Recipe for Turkey Meatloaf Muffins

2 packs of ground turkey
½ cup oatmeal (I like whole flake)
1 egg
1 tsp minced garlic
½ tsp Worcestershire sauce
2 chopped green onions (could use white)
salt and pepper

½ cup cheese 
1 cup tomato sauce

1. Place Cheese and tomato sauce aside, then mix remaining ingredients in bowl.

2. Cut cheese into 1 inch cubes

3. Form meat into balls, place cheese in center and put in muffin tin

4. Bake at 420 for 20 minutes, remove and spoon tomato sauce on top, then bake for 8 more minutes.

That's it. It took less then 15 minutes to prep these delicious bites.


Ready for the oven.


Perfectly cooked and ready to eat! Those look so delish.



Total side note, we have snow! Never in my life have I ever seen snow at this time of year. I guess there's a first for everything. Time to pull out the boots.

Pumpkin Spice Latte Shake


Every year at this time pumpkin spice seems to pop up everywhere. I love it!! But they always seem t be calorie packed with loads of sugar. My mission was to come up with a tasty treat for my taste buds, and always great if it can be mixed with my Shakeology! I have hit the jackpot with this one. There are sooo many ideas floating around online, and this seems to be the sum of them all. All the flavour without all the added calories. Even better!

Recipe for Pumpkin Spice Latte Shake

1 scp vanilla Shakeology
2 tbsp pumpkin spice puree
4-5 ice cubes
1 cup vanilla almond milk
½ cup water
1 tsp pumpkin spice seasoning



Happy fall and enjoy all the pumpkin spice you can get.

Pumpkin Pie Oats


The weather is getting chilly and the days a little shorter. Is it just me or do you crave pumpkin spice right now? I was feeling excited this week to start trying some new pumpkin recipes. Who am I kidding, all these recipes are new to me. lol. I pulled this one right from the Beachbody Blog, and will be making it all the time now. I can't believe how many great and healthy recipes are on there, definitely worth a peak.



Recipe for Pumpkin Pie Oats


½ cup steel-cut oats (or old-fashioned rolled oats)
½ cup pumpkin puree
¼ tsp. pumpkin pie spice
1 Tbsp. chopped pecans (or walnuts)
2 tsp. pure maple syrup (or raw honey)
½ cup unsweetened almond milk (I used vanilla for a little extra flavour)



1. Mix all ingredients together and store in fridge

2. Wait at least 6 hours, then heat and enjoy



I love the texture!!



That's it! Super easy and deliciously sweet. I'll definitely be impressing with this gem of a recipe.

Italian Sausage Baked Zucchini



If you like  Italian sausage and zucchini, I have the recipe for you. I'm really trying to expand my clean eating menu and have resolved to try something new each week. Along the way I'll share all my recipes with you, Hope you enjoy!

This one was so delish that I had to have seconds. And why the heck not, it's super healthy!! For this dish I used mild sausage, but you are more than welcome to spice it up with hot hot hot! I also used Pice de Gallo from Costco, but I'm sure salsa would work too. Other than that, I let the sausage do the flavouring. This was one savoury dish!



Recipe for Italian Sausage Baked Zucchini

3 medium zucchini
3 Italian sausage
1 cup spaghetti sauce
1/2 cup pico de gallo
shredded cheddar cheese


1. Set oven to 350
2. Remove peal on sausage and cook in pan
3. Add speg sauce and pico de gallo, continue to cook 
4. Slice zucchinni and spoon sausage mixture on top
5. Top with cheddar cheese
6. Bake for 35 minutes


I think I'm actually going to look for other veggies I can eat this topping on. First try, spaghetti squash.

Spicy Chicken and Sweet Potato Casserol


I found this awesome recipe on Pinterest, made a few tweaks and it is so delish!! Honestly, I'm a really horrible cook with a small menu. LOL. So my goal this month is to try new, clean and 21day fix approved meals. Which really isn't too hard with the overflowing amount of recipes on Pinterest, for inspiration. So here's my take on it!
I love all three things in this recipe: spicy, chicken and sweet potatoes!!

Recipe for Spicy Chicken and Sweet Potato Casserole
2 chicken breasts
6 slices of turkey bacon diced
2 sweet potatoes
green onions
1 tsp paprika
1tbsp minced garlic
2 tbsp sriracha
salt and pepper
1. Dice and fry up turkey bacon in frying pan and set aside
2. In bowl combine paprika, garlic, sriracha, salt and pepper
3. Toss in diced chicken and sweet potato, mix well till evenly coated
4. Place in baking dish and cook 55 minutes
5. When complete top with turkey bacon and green onions
Enjoy!! if you like it hot hot, double the hot sauce to your liking. I found this recipe zippy, but not HOT, if that makes sense
